Watermelon, Cheese & Nut Bites

A couple months ago I went to Turks & Caicos, you may be wondering why would anyone leave Jamaica for another island and you’d be right for doing so but that discussion is for another post.

At Beaches Resort, Turks & Caicos, as you can imagine one is spoilt for choice with 16 restaurants on the property and then there are all the restaurants in Providenciales “Provo”. Two thirds of the population are expats, which I believe really helps the restaurant industry because you can get anything from foie gras to grilled octopus and all the conch you can eat.

One evening I was at Beaches and picking up a selection of antipasti, enough to feed a small town, and I bit into a watermelon-cheese combo. This might not sound exciting or even mildly attractive but trust me, as soon as I tasted it I knew I wanted to share it on The Yummy Truth because it isn’t something I had had before and it is so simple to make. The refreshing watermelon, earthy cheese and crunchy nut provides all the flavour and texture you could want in any small bite.

Watermelon, Cheese & Nut Bites

Ingredients
  1. 1.3 kg Watermelon
  2. 2.5 oz goat cheese
  3. handful of walnuts
Instructions
  1. Cut watermelon into tall cubes, approx. 1.5” x 1” x 1”
  2. Scoop a shallow hole in each cube, using a very small measuring spoon or knife.
  3. Fill each hole with a bit of goat cheese and top with a piece of walnut.
  4. Refrigerate until you are ready to serve.
