I love the combination of plantain and bacon; I feel like everyone knows what plantain is but just in case, think of it as banana’s bigger more savoury cousin. I remember going to cocktail parties in Jamaica and having fried plantain wrapped in bacon on sticks and trying to be cute by not grabbing the whole tray. I love dishes that are salty and sweet and this ticks all the boxes.
