Some days it feels like Summer was never really here in London and then there are those days that we only dream of and London becomes the place where most would be very happy to be. This Pimm’s recipe was created in celebration of this past weekend where despite a spell of torrential rains temperatures have been high and the sunshine has been bright.
I first heard about Pimm’s from my flatmate at college 5 years ago and I wasn’t that impressed but that’s probably because she didn’t make it, instead I only saw the bottle collect dust in our cupboard. I think I have mentioned this before but I do love that every country seems to have it’s own Summer cocktail, at least in Europe, and they are all so different yet the thing that remains the same is that Summer is a time for celebrating and a yummy cocktail definitely helps get things started.
Pimm’s has a lot of history, it goes back to 1823 and you know the product must mean business because it has The Queen’s stamp on the label. (For those of you who, like myself didn’t know, a Royal Warrant of Appointment is a mark of recognition of those who have supplied goods or services to the Households of HM The Queen, HRH The Duke of Edinburgh or HRH The Prince of Wales for at least five years, and who have an ongoing trading arrangement.) So if you want to drink up like royalty this Summer you still have time. This refreshing recipe is too easy not to try; literally chop, pour, stir and enjoy.

- 1/2 Orange, sliced
- 1/2 Apple, sliced
- 2 Strawberries, sliced
- 45ml Pimm's
- 120ml Lemonade (Fizzy)
- Handful of basil and mint, muddled
- Ice
- Prep the fruit
- Muddle the herbs
- Fill glass with ice
- Add fruit and herbs
- Pour Pimm's
- Top up with lemonade
- Eat the fruit left behind and feel free to add cucumber if you like that flavour.
