While I was jet-setting over the last week I had been craving mac & cheese, but I didn’t want just any mac & cheese, I wanted something that would be creamy, decadent but not heavy, and have vegetables and pork. I envisioned something that would be addictive and worth all the calories. Hence I knew I couldn’t go to just any and anywhere, so I opted to be safe rather than sorry and bake my own. You know I’m not selfish so I had to share the recipe with you so you too can indulge.

Utlimate Mac and Cheese

My favourite comfort food is mac and cheese, this one is packed with special ingredients.

Ingredients
- .5 lbs macaroni
- 473 ml whole milk
- 1/2 cup of white wine (Sauvignon Blanc was my choice)
- 3 garlic cloves, sliced
- 6 tablespoons unsalted butter
- 1 cup Aged Cheddar, grated
- 1 cup Gruyère, grated
- 1 cup Parmigiano Reggiano, grated
- 1 lb pork belly, diced
- 1/2 onion, diced
- 1 cup mushrooms, chopped
- 1 cup broccoli, chopped
- 1/4 cup sour cream
- 2 eggs, beaten
- 3/4 cup panko breadcrumbs
- 1/4 cup seasoned breadcrumbs
- 3 tablespoons flour
- Olive Oil
Instructions
- Preheat oven to 350 degrees
- Cook pasta according to instructions. Three minutes before it is finished cooking add broccoli to the pot and then strain.
- Cook pork belly, mushrooms, onions and garlic in 2 tbsp of olive oil until pork belly gets some colour (approx 5 minutes).
- Mix the pork belly mixture with macaroni and broccoli along with the sour cream.
- In a saucepan over medium heat add 3 tbsp of butter, milk, whisk flour and cook for a minute before adding 2 cups of the 3 cheese mixture, salt and pepper.
- Grease a casserole dish and fold pasta into cheese sauce.
- Melt 3 tbsp butter in another saucepan then add breadcrumbs.
- Top macaroni with breadcrumbs and the rest of the cheese.
- Bake for 30-45 minutes.
Notes
- When folding the pasta into sauce, if there is sauce left over save it to top mac & cheese before serving.
