Summertime has a distinct feel, it isn’t just about the heat it’s about a joyful atmosphere that brings people together whether it’s to have cocktails on a rooftop bar, gather around a barbecue surrounded by smokey aromas or lounge by the pool soaking up the sun. Everyone is talking about their favourite grilling recipes and it’s about time I shared this one with you – grilled corn on the cob is delicious and super easy. My dad loves corn all year round and this recipe is a winner because the charred flavour of freshly grilled corn combined with Mexican inspiration makes for the perfect bite every time.
This recipe can also work for a barbecue but if you are using your griddle pan don’t be afraid when you see some smoke taking over your entire kitchen, and don’t get worried when the corn kernels begin to look black, you are not having a culinary disaster by burning your food, on the contrary you are having a moment of culinary magic because those burnt looking parts are the tastiest.
Heat griddle pan over medium heat with a light brush of olive oil.Place corn on the pan and turn once each side gets brown, this will take about 20 mins for all sides to be cooked evenly.
While the corn is cooking mix lime juice, parmesan, chopped cilantro, cayenne pepper, butter and a dash of salt and pepper with a fork and then put it in the freezer.
Once corn is cooked spread the butter all over it, garnish with cilantro and lime and serve.

- 1.5 tablespoons of butter, room temperature
- salt and pepper
