A few weeks ago I enjoyed an amazing weekend on the South-coast of Jamaica. In addition to jumping into ice-cold water at YS Falls from a rope and getting a ‘water massage’, eating pepper shrimps from a street vendor and taking in the untouched beauty of my island, we took a trip to Pelican Bar. This bar is in the middle of the sea off the coast of St. Elizabeth. One has to take a boat (unless you prefer to take a long distance swim) to get to the wooden bar built on stilts. Once you arrive you will see flags from all over the world, names etched in the drift wood and men jovially playing dominoes. We ordered our drinks, cautiously took a seat outside, legs hanging over the “walkway” facing the sunset and I had an instance of complete peace and gratitude. Pelican Bar is apparently on the list of things to do before you die and once you arrive you will understand why.
A friend once toasted “To Everything!” and I thought it was the best all-encompassing toast with such few words. When I was standing at the Pelican Bar with the sea breeze gently across my face, the warmth of the sun on my skin, and sipping on my rum cocktail I felt as though in that moment I had everything I needed and wanted. I made a Rum Punch that hopefully will bring a moment of ultimate satisfaction to you and your loved ones. Don’t underestimate how ‘yumminess’ can make you feel.
Jamaican Rum Punch Recipe (Serves 4)
Ingredients
- 1 cup Orange Juice
- 1/4 cup Dark Rum
- 1/4 cup Coconut Rum
- Juice of 1/2 lemon or lime
- 1/2 cup of Fruit Punch (any mixed fruit blend can be used as a substitute)
- 1/2 cup Passion Fruit Juice
Method
- Blend all the ingredients with a cup of ice and serve.
