In keeping with the healthy theme, baked salmon is really quick and easy to make. 15 minutes in the oven and voila! I used to eat salmon all the time, recently as a part of changing the way I eat not what I eat plan, I have increased the amount of fish in my diet. I do attribute more fish and less meats to my weight loss. Salmon will help lower cholesterol, improve your memory and speed up your metabolism. The coleslaw in the pictures is my low fat version that I will share with you soon, so don’t thinking I am cheating.
Rinse you fillet and place on a piece of foil. Rub salmon with olive oil, sprinkle a couple pinches of salt and pepper before laying thyme, garlic and lemon on top.
Wrap in foil and bake for 15 minutes.

- Salmon fillet (approx. 0.4 kg)
- half lemon, sliced
- .5 tsp olive oil
- 2 sprigs of thyme
- 2 garlic cloves, crushed
- salt & pepper
