I know technically it isn’t summer yet but Lord it is hot! What better way to cool down than a refreshing popsicle? When I was younger I would love a “kisko” in Jamaica, my favourites were cream soda and grape, or an “ice lolly” in England where I would use my finger to scoop out the yellow swirl of a Twister before licking the rest.
The child in me hasn’t died but her taste buds may have matured in some ways because these adult popsicles made with an easy go-to cocktail recipe definitely does the trick of cooling me down in the heat. The great thing is you can make these popsicles with any cocktail you desire, trust me if it tastes good in your glass as a liquid it will taste even better when its frozen and a sweat droplet is about to trickle down your forehead. Don’t worry about moulds or sticks, improvise like I did by making my own sticks and using various glasses for moulds. These Cuba Libre popsicles are perfect for Memorial Day or any other day where you might have friends over; share them out before you start the barbecue or take a trip to the beach. Obviously if children are involved in your gatherings simply eliminate the alcohol and use different coloured sticks so you remember which is which. Be happy, be merry, stay cool!
I improvised a lot to make this recipe, now I have proper popsicle moulds but at the time I didn’t and therefore I made the popsicles set in glasses and for stick I used cut plastic knives.

- 2 cups pepsi
- 1 cup Malibu
- 2 limes zest
- 1 lime juice
- 1.5 teaspoon vanilla extract
- shake the pepsi vigorously for a couple minutes and allow to sit.
- Mix all ingredients and pour into the mould
- Freeze for 1.5 hours and check that the popsicle sticks can hold up and then freeze for another 8 hours or overnight.
